Veggie Garden Crock pot Lasagna
I got this all ready to go in the crockpot so that all hubs had to do was turn it on. It came out good, a few things I will do different next time; which are reflected here.This is sort of like Saturday Soup - at the end of the growing season, go out and pick what you can find!
Not from the garden, you will need cheese and no-cook lasagna noodles. If you don't have your own, you will need tomato pasta sauce. For cheese, I used ricotta, mozzarella ball, and shredded Italian white mix.
Start with a couple large bundles of kale. Add a few other leafy greens for flavor - such as mustard, basil, arugula. Wash and blanch the greens. Blanch by boiling water for 3 minutes followed immediately by a 3 minute ice water dunk. Then let drain. Cut into sections and divide into two equal parts.
Now for the fun part. Go forth and pick. Whatever you can find in the garden that can be sliced, diced, and/or grated. At the end of our cool weather, beginning spring weather I picked: radish, turnip, carrot, onion, garlic, peppers, beans, peas, tomatoes. Slice, dice and grate.
Next up, the lasagna layering. Start with a thin coating of tomato pasta sauce. Then lay out one of the parts of the prepared kale greens. This layer serves as a pasta substitute layer.
Next up, a bit more tomato pasta sauce and ricotta cheese. Mix it all up and spread evenly. Dump in the fun part - the diced, sliced and grated veggies you picked from the garden.
Now add the last part of the prepared kale greens. Top with a coating of tomato pasta sauce and crumple up the mozzarella ball.
Lastly, spread the no-cook lasagna noodles on top, layer on more tomato pasta sauce and a sprinkling of shredded Italian white mix cheese.
Cook for about 2 hours in the crockpot.

Cabbage Soup
This can be stove top or crock pot.
Thin slice and brown some medium spicy sausage.
Add a bunch of water and/or veggie broth.
Add a quartered head of cabbage, sliced onion, medium hot pepper.
Salt, pepper, paprika and other seasoning to taste.
Cook until desired tenderness.
